It wasn’t until about 3 years ago that I even thought of trying brussel sprouts. NOW I love them! Just finding the best ways to cook them has been my biggest issue. I don’t like when they have that bitter taste. It’s a big turn off! I have asked my Fit Chick Express girls for some recipes and some of them I liked but some just still didn’t have the flavor I liked.
So a few weeks ago I just made up my own recipe! I started by chopping up some bacon and frying in a pan until it was nice and crispy. Then I LEFT the bacon grease in the pan, because who doesn’t love the flavor of BACON!! I chopped up some onion and quartered the brussel sprouts after I cut off the ends. Put them in the pan and left them to soften. I seasoned them with some garlic salt and pepper and added a little bit of coconut milk to help soften up the sprouts. When the brussel sprouts were soft and the bitter taste was gone, I added back in the cooked bacon along with some dried cranberries and pine nuts.
The flavor was AMAZING and it was simple to make! I plan to make some more of them tonight.
Ingredients (Just fyi, I never measure anything OR follow a recipe, if you want specifics, just ask and Ill try to guess! )
- bacon
- brussel sprouts
- onion
- garlic salt and pepper
- coconut milk
- pine nuts
- dried cranberries
